If you’re anything like me then you like to throw a great Super Bowl party even if we won’t have people over to celebrate. Every year I like to offer my family and friends new delicious and creative recipes. Of course, I also offer tried and true favorites but adding new dishes is also fun.
Here are three creative recipes courtesy of Three Bridges. They recently contacted me to see if I would share these recipes with you. I, of course, had to give them a try first to see if they were good. You know that I only like to bring you good information you can use. I am happy to say that everyone even the boys loved these recipes. I hope that you and your loved ones enjoy them as much as we did. Enjoy!
Gameday Ravioli Nachos
This is a fresh, fun spin on a classic game day favorite that’s sure to please everyone– from children who are picky eaters to adults with sophisticated, refined palates.
PREP TIME: 10 MIN | COOK TIME: 30 MIN
TOTAL TIME: 40 MIN | YIELDS: 4 SERVINGS
Ingredients:
1-18 oz pkg Three Bridges Family Sized Ravioli (any kind)
1-15 oz Three Bridges Heirloom Marinara Sauce
1/4 cup olive oil
2 tbsp lemon juice
1/3 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1/2 tsp salt
1/2 tsp fresh ground pepper
6 oz sausage, cooked and crumbled
1-pint cherry tomatoes, sliced
1 cup mozzarella cheese, grated
4 green onions, sliced
1/2 cup pitted black olives
Instructions:
Preheat oven to 400 degrees.
Cook ravioli according to package directions, drain. Transfer to a lined baking sheet. Brush with olive oil and lemon juice.
In a small bowl mix breadcrumbs and parmesan cheese with salt & pepper.
Sprinkle mix over ravioli.
Bake 15-18 minutes or until golden brown.
Sprinkle all toppings over toasted Ravioli. Warm in oven.
To serve: Dip in Three Bridges Marinara Sauce. Enjoy!
Superfood Pesto Cauliflower Pizza- Vegetarian
A simple make at home pizza using Three Bridges Superfood Pesto, cauliflower, Parmesan, Mozzarella, and Ricotta cheeses for a nutritious and delicious meal.
PREP TIME: 5 MIN | COOK TIME: 25 MIN
TOTAL TIME: 30 MIN | YIELDS: 4 SERVINGS
Ingredients:
7 oz tub Three Bridges Superfood Pesto Sauce
15 to 16 oz pkg fresh pizza dough
1 medium cauliflower, florets, about 1 inch in diameter
1/4 cup extra-virgin olive oil
1 tbsp garlic, sliced
4 oz parmesan cheese
8 oz fresh mozzarella, sliced
1/4 cup ricotta cheese
Instructions:
Preheat the oven to 450 degrees.
Place the cauliflower florets in a large saute pan or a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, salt, and pepper. Place the saute/roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting.
Remove from the oven and sprinkle with the parmesan cheese. Let cool to room temp.
On a lightly floured surface, knead the dough a few times and form it into a round flat disc. Roll or stretch the dough out into a thin 15-inch circle. Keep the dough moving on the surface so that it does not stick, dusting the dough and surface with semolina flour or cornmeal as needed. Place on a baking tray or peel if you have a pizza stone for the oven.
Lightly brush a one-inch border with extra virgin olive oil around the pizza.
Spread 4 ounces of the Three Bridges Superfood Pesto around the rest of the pizza and then evenly distribute the cauliflower florets, ricotta and mozzarella cheeses.
Bake in the oven for 10-15 minutes until the cheese has slightly browned.
Remove from the oven to a cutting board and add fresh cracked pepper.
Slice and serve immediately. Enjoy!
Parmesan Rainbow Tortellini Bites- Vegetarian
PREP TIME: 15 MIN | COOK TIME: 10 MIN
TOTAL TIME: 25 MIN | YIELDS: 4 SERVINGS
Ingredients:
18 oz pkg Three Bridges Rainbow Tortellini Family Size
1 cup vegetable oil
1 cup panko breadcrumbs
1/2 cup parmesan cheese, freshly grated
1 cup all-purpose flour
4 large eggs, beaten
1 cup Three Bridges Heirloom Marinara Sauce
Instructions:
Bring a large pot of water to a boil. Add tortellini and cook according to instructions on the package. Drain well.
Heat vegetable oil in a large skillet over medium heat.
In a large bowl, combine panko and parmesan then set aside.
Working in batches, dredge tortellini in flour, dip into eggs then dredge in panko mixture, pressing to coat.
Add tortellini to the skillet, 8 or 10 at a time, and cook until evenly golden and crispy, about 1-2 minutes. Transfer cooked tortellini to a paper towel-lined plate. *Tip: If the oil begins to smoke, reduce heat and continue cooking.
Serve immediately with marinara sauce and garnish with additional parmesan, if desired. Enjoy!

i like the variety of different recipes. I am not vegan but I do eat vegan meals occasionally.I like the flavor of the ingredients in the dishes I have tried.These are good alternatives to the more fattening recipes.
