Clean Eating Doughnut Holes Recipe

This recipe is great for those on the go and on a diet. These healthy doughnut holes have only a 40-minute prep time and all-natural ingredients that will make you want to celebrate national doughnut day every year! Clean Eating Doughnut Holes

Ingredients
1 cup cashews
1 cup rolled oats
1 cup chopped, pitted dates
Pinch kosher salt
2 Tbsp coconut oil
2 Tbsp pure maple syrup
1⁄4 tsp pure vanilla extract
Instructions
1 – Soak cashews in water for at least 4 hours; drain.
2 – Combine cashews, oats, dates, and salt in a blender or food processor. Process until a thick dough forms.
3 – Roll dough into 1-inch balls; place in freezer until firm, about 20 minutes.
4 – Melt coconut oil; stir in maple syrup and vanilla.
5 – Dip doughnut holes in glaze, and refrigerate until glaze sets.
6 – Store doughnut holes, covered, in refrigerator for up to 1 week.
