Here is a classic favorite Corned Beef Hash, with a healthy twist. I hope you like it as much as I do.
Ingredients:
Lite cooking spray or 2 tablespoons olive oil
¾ lb Yukon Gold potatoes, diced
1 cup chopped yellow onion
1 red bell pepper, diced
½ lb deli corned beef, chopped
Directions:
1. Heat a large nonstick skillet over medium-high heat, and spray with cooking spray.
2. Add potatoes, onion and bell pepper.
3. Cook 8 minutes or until tender, stirring frequently.
4. Add corned beef, and cook 2 minutes or until browned.
Serve and enjoy! 🙂
