Tomato and Green Onion Eggs with Avocado

Here’s a recipe for a way to start your day healthy. And if you’re like me and have started to eat clean, this is a yummy recipe. One of my resolutions this year was to lose weight. I’m sticking to it no matter how hard it gets. When ever I need a little motivation I look at a quote that I have hanging on my fridge. “If you eat what you’ve always eaten. Ok now on to the recipe. 

Ingredients:

1 tablespoon olive oil
2 plum tomatoes, chopped
¼ cup chopped green onions, divided
8 large eggs, lightly beaten
½ teaspoon salt, ½ teaspoon pepper
½ cup shredded Colby Jack cheese
1 avocado, pitted and sliced

Directions:

Heat oil in a large nonstick skillet over medium heat.

Add tomatoes and 3 tablespoons green onions; cook 2 minutes or until tender.

Add eggs, salt and pepper to skillet; cook, without stirring, until eggs begin to set on bottom.

Sprinkle with cheese.

Cook, stirring constantly, until eggs are thickened and set and cheese melts.

Top each serving with avocado and remaining green onions.
