Roasted Carrots with Thyme

This recipe gives carrots a whole new flavor. My boys who are picky eaters absolutely love this recipe. With a total prep /cook time of only 30 minutes, it’s the perfect side dish for your holiday meal. 


  • 3 lbs. medium carrots, halved lengthwise
  • 2 tbsp minced fresh thyme or 2 tsp dried thyme
  • 2 tbsp canola oil
  • 1 tbsp honey
  • 1 tsp salt


  • Preheat oven to 400°.
  • Divide carrots between two greased 15 x 10 x 1-in. baking pans.
  • In a small bowl, mix thyme, oil, honey and salt
  • Brush mixture over carrots.
  • Roast 20-25 minutes or until tender.



This recipe yields 12 servings.
