This recipe gives carrots a whole new flavor. My boys who are picky eaters absolutely love this recipe. With a total prep /cook time of only 30 minutes, it’s the perfect side dish for your holiday meal.
Ingredients:
- 3 lbs. medium carrots, halved lengthwise
- 2 tbsp minced fresh thyme or 2 tsp dried thyme
- 2 tbsp canola oil
- 1 tbsp honey
- 1 tsp salt
Directions:
- Preheat oven to 400°.
- Divide carrots between two greased 15 x 10 x 1-in. baking pans.
- In a small bowl, mix thyme, oil, honey and salt
- Brush mixture over carrots.
- Roast 20-25 minutes or until tender.
This recipe yields 12 servings.
