Sugar-Free Cantaloupe Mousse Recipe

I have always loved the refreshing taste of cantaloupe. And this mousse recipe is light, fluffy, and is infused with the sweet refreshing taste of cantaloupe. Another thing that I love about this sweet treat is that it’s perfect on its own or topped with cranberry sauce, or berries, and whipped cream. I hope you enjoy this recipe as much as I do!
Sugar-Free Cantaloupe Mousse Recipe
Makes 4 servings
Ingredients:
1 tsp. unflavored gelatin
1 Tbsp. cold water
2 Tbsp. boiling water
1/2 cup powdered erythritol
1/4 cup of pureed cantaloupe
1/2 tsp. cantaloupe extract (optional, I only use it if the cantaloupe I’m using doesn’t have a strong flavor)
1 cup heavy cream, very cold
Directions:
Sprinkle gelatin over cold water in small bowl; stir and let stand 1 minute to soften.
Add boiling water; stir until gelatin is completely dissolved. The mixture will be clear.
In a large cold mixing bowl, combine powdered erythritol, pureed cantaloupe, cantaloupe extract (if using it), and heavy cream.
Beat at medium speed until stiff peaks form; pour in gelatin mixture and beat until well blended.
Spoon or pipe into individual serving dishes.
Cover loosely and chill 3 hours minimum or until ready to serve.
Garnish with cranberry sauce, berries and/or whipped cream as desired.
Okay, I googled erythritol, lol. It’s in Truvia, so I’ve used it even if I hadn’t heard of it!
I’ll have to google erythritol, lol. I don’t think I’ve ever heard of it. But I like the idea of using cantaloupe.
