Easy Pineapple Pork Chops Recipe

Makes 4 servings

Ingredients:

6 pork chops

1 cup orange juice

9 slices of pineapple

1/2 tsp. ground cumin

1 tbsp Adobo

salt and pepper to taste

Directions:

In a pot over medium heat, bring orange juice, Adobo, salt, pepper, cumin, and pork chops to a boil, and cook for about 30 minutes.

While the pork chops are boiling take 3 pineapple slices and chop them into really small pieces.

After the pork chops have been boiling for 30 min add all of the pineapple (6 whole slices, and cut pieces), and boil for another 15 minutes or until pork chops register at 160 degrees Fahrenheit.

Remove pork chops and whole pineapple slices from the pot, leaving the liquid. And simmer the liquid for 3-5 minutes until it becomes a sauce.

Plate pork chops with a pineapple slice, and sauce on top. Serve with a side salad or rice.

Tips:

I use this great tool to get perfect pineapple slices. You can also feel free to use canned pineapple. However, I would recommend fresh whenever possible.
