I was never a big fan of pesto. There was always something missing whenever I would try one. My hubby, on the other hand, is a huge fan of pesto and is always asking me to make it for his spaghetti. One day in the middle of making my usual pesto recipe my oldest thought it would be funny to add avocado and blend it together while I was in the bathroom.

He of course only told me he had blended everything I already had in the blender to help me out. The result was the creamiest and the best tasting pesto I have ever tried. Best of all, it’s quick and easy to make!

So this is his recipe for a delicious sauce that we hope you enjoy as much as we do!

Avocado Spinach Pesto

Makes 8 servings

Ingredients:

1 Avocado

2 Cups Spinach

1 Cup Parsley

1 Cup Basil

2 Garlic, clove

2 Tablespoon Parmesan Cheese

2 Tablespoon Olive Oil

6 Tablespoons Lemon Juice

Salt and pepper to taste

Directions:

Add all ingredients except for the olive oil and pulse until you have a chunky paste.

Add the olive oil and blend again. Feel free to add more oil as necessary.

Enjoy!

Tips:

You can freeze this pesto in ice-cube trays for long-term storage.

    I never thought of using avocado in pesto but I can see how it would give it a nice taste boost. It would work well.
