Blueberry Muffins are one of our favorite breakfast treats. Here is the recipe for the blueberry muffins that is a favorite in our house. Some of us like it with butter, some like it with a little jam and some like it just plain. I hope that you will try and like these blueberry muffins!
Our Favorite Blueberry Muffin Recipe
Makes 12 servings
Ingredients:
1 cup fresh or frozen blueberries
1-3/4 cups plus 1 tbsp flour
1/2 cup sugar
1 egg
1 tsp baking powder
1 cup sour cream
1/2 tsp baking soda
1/3 cup milk
1 tsp nutmeg
3/4 tsp salt
Directions:
Preheat your oven to 400° F
Grease twelve 2-1/2 inch muffin cups
Toss blueberries with 1 tbsp of flour
Combine the remaining ingredients: 1-3/4 cup flour, sugar, baking powder, baking soda, nutmeg, and salt.
In another mixing bowl, beat the egg, sour cream, and milk. Once it’s mixed, stir into the flour mixture until combined. Don’t worry if the batter is lumpy. This is normal.
Fold in the blueberries until it’s evenly distributed.
Fill the muffin cups with the batter until they are 2/3 full.
Bake about 20 minutes until the muffins are golden.
