These Bean and Beef Enchiladas are sure to please.
This recipe is a favorite here at the house and the time has come for me to share it with you. Everyone here love the homey and delicious flavor of these enchiladas. Whenever I have taken this dish to a party they have been a huge hit! If you like chicken instead of beef just swap it out, this recipe comes out great with either. I hope your family enjoys this recipe as much as mine does.
Ingredients
1 lb. ground chuck
1 cup chopped onion
1 can 15 oz pinto beans, drained and rinsed
1 package 1.25 oz taco seasoning mix
8 corn tortillas 6 inch
8 oz sour cream
2 cans 10 oz each of enchilada sauce
2 cups of shredded Cheddar cheese
Directions
1. Preheat oven to 350°F.
2. Cook ground chuck and onion in a large skillet over medium heat. Until beef is browned and crumbled; drain and return to skillet.
3. Stir in beans, taco seasoning mix, half of sour cream, 1 can of enchilada sauce and 1 cup of cheese.
4. Lightly greased 2 1⁄2 quart baking dish.
5. Take a tortilla and fill with a tablespoon of beef mixture. Roll and place seam side down into baking dish.
6. Repeat step 5 until all of the bottom of the baking dish is covered.
7. Top with half of sour cream, 1 can enchilada sauce, and 1 cup of cheese.
8. Bake 30 minutes or until hot and bubbly.
Serve with rice and enjoy!
