Quick Broccoli Cheddar Soup

Whenever there’s a cool and rainy day I find it perfect weather for a nice bowl of soup. My favorite soup has always been broccoli cheddar soup. Because this is my favorite, I am very picky with the flavor. It has to be just right and not just any broccoli cheddar soup will do. There are a couple places that make it just the way I like it, but come on who want’s to be going out in the rain. I honestly don’t like going anywhere in the rain. Maybe it has to do with the fact that I wear glasses and can’t stand all those little drops that stick to them. 🙂 Any way back to talking soup. I want to share this recipe for a quick broccoli cheddar soup, because if you’re like me I’m you don’t want to be spending a lot of time waiting for this delicious soup to be ready. 🙂 Let’s get on with the recipe.

Ingredients:

12 oz package steam-in-bag fresh broccoli florets

5 oz Shredded carrots

4 tablespoons butter

¼ cup flour

14 oz can reduced-sodium chicken broth

2 cups 2% milk

1½ cups shredded reduced-fat Cheddar cheese 

Directions:

1. Microwave broccoli according to package directions.

2. Remove broccoli from bag to a cutting board, and let cool slightly.

3. While the broccoli is cooling in a medium saucepan over medium heat melt butter.

4. Whisk in flour, and cook, whisking constantly, for 2 minutes.

5. Gradually whisk in broth, milk, and carrots.

6. Bring to a simmer, and cook, whisking occasionally, for 5 minutes or until thickened.

7. Finely chop steamed broccoli.

8. Add chopped broccoli and cheese to pan, whisking until cheese melts.
