In Guatemala we make rice pudding to have as a delicious dessert often, and in my home I make it often as well. But I have heard about the wonderful benefits of brown rice. With those benefits in mind I’ve decided to go ahead and make a brown rice version. Here I share with you this yummy recipe for Brown Rice Pudding!
Ingredients:
6 cups low-fat milk, divided
⅓ cup packed brown sugar
½ teaspoon salt
½ cup uncooked long-grain brown rice
½ cup raisins
2 teaspoons vanilla extract
Directions:
1. Combine 5½ cups milk, sugar and salt in a large saucepan; bring to a boil over medium-high heat.
2. Stir in rice; reduce heat to medium-low.
3. Cover and simmer over medium-low heat 50 to 60 minutes or until thickened and rice is done.
4. Stir in raisins and vanilla.
5. Transfer to a large bowl, and let cool.
6. Cover and refrigerate 4 hours or overnight.
7. Stir in remaining ½ cup milk before serving.
I hope you enjoy this recipe as much as I do!
Tip: I love to eat my rice pudding hot as soon as it’s done cooking, my boys however like it cold the next day. Either way you decide to have it, I’m sure you will like it. 🙂
