There’s nothing like a delicious and healthy breakfast. These whole-wheat pancakes are just that, delicious and healthy! They taste so yummy, that they seem more like a treat than a healthy alternative. Here’s the recipe so you can enjoy them too. 🙂
Ingredients:
1 cup all-purpose flour
1 cup whole-wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
2 cups low-fat buttermilk
2 tablespoons molasses
1 tablespoon butter, melted
2 teaspoons fresh lemon juice
2 large eggs
2 Granny Smith apples, peeled and chopped
Directions:
Combine flours, baking soda, baking powder, cinnamon and salt in a large bowl, stirring with a whisk.
Combine buttermilk, molasses, butter, lemon juice and eggs in separate bowl; whisk until well blended.
Add buttermilk mixture to flour mixture, and stir until smooth.
Fold apple into batter, and let stand 5 minutes.
Heat a nonstick griddle or large nonstick skillet coated with cooking spray over medium heat.
Pour about ¼ cup batter for each pancake onto hot skillet.
Cook 3 minutes or until tops are covered with bubbles; turn and cook other side.
Repeat with remaining batter.

These would be so good with some fried apples on top!
