Bell Pepper Pita Pizza Recipe

Here’s a recipe for a quick and not so greasy lunch, it’s my Bell Pepper Pita Pizza Recipe! This is a delicious little pizza as the pita crust gets nice and crispy, and the bell pepper, basil combination tastes oh so good! Let’s get on with the recipe.

Ingredients:

4 whole wheat pita rounds (I use the 2 oz ones)

1 tablespoon olive oil

1 teaspoon dried basil

1⁄2 cup lower-sodium marinara sauce

2 plum tomatoes, sliced

1 yellow bell pepper, thinly sliced

1⁄2 small red onion, thinly sliced

1 cup shredded part-skim mozzarella cheese

Directions:

1. Preheat oven to 450°F.

2. Brush pitas with oil, and sprinkle with basil.

3. Place on a baking sheet and bake for about 3 minutes.

4. Top pitas with marinara sauce, tomato, bell pepper, onion and cheese.

5. Bake 10 minutes or until cheese browns.

6. Cut each pita into quarters.

7. Serve and enjoy!

Recipe Tip: These pita pizzas are perfect to place in an air-tight container or wrap well in aluminum foil to take for lunch at work.
