Today’s Special: Meatball Soup!

This is a hearty, delicious, soup that’s excellent for a weeknight meal or a casual supper with friends. The bite-sized meatballs, are made extra delicious because they are added to a flavorful broth that’s full of vegetables. I serve it with a big loaf of crusty Italian bread and plenty of extra Parmesan.

Ingredients:

2 potatoes, cut into ½-inch cubes

1 small onion, chopped

2 small packets of beef bouillon (one packet is equivalent to 1 cube; feel free to use cubes if you prefer)

2 (15 oz) cans tomato sauce

½ teaspoon Italian seasoning

¼ teaspoon pepper

16 oz package frozen mixed vegetables

2 lb frozen bite-size meatballs

Directions:

1. Bring potatoes, onion, beef bouillon packets, tomato sauce, 3 cups water, Italian seasoning, pepper and mixed vegetables to boil in large saucepan.

2. Cover and reduce heat.

3. Simmer for 10 minutes.

4. Add meatballs and cover.

5. Simmer for an additional 10 minutes, until vegetables are tender and meatballs are heated through.
