P is for Paleo. I am sure you have heard this word constantly these days. The Paleo diet is one of the healthiest ways you can eat because it has a nutritional approach that works with your genetics to help you stay lean, strong and most importantly energetic! 

Paleo Secretly Sweetened

 

I don’t only like the Paleo diet because it’s healthy. I also like it because you can create absolutely delicious foods! Here is one of my favorite Paleo recipes. Ingredients:

 

1½ cups walnut halves or pieces

 

1 cup pitted dates

 

⅓ cup unsweetened cocoa

 

1½ teaspoons vanilla extract

 

⅛ teaspoon salt

 

 

Directions:

 

Preheat oven to 350 degrees.

 

Bake walnuts on a baking sheet 6 to 10 minutes or until toasted; cool.

 

Place walnuts in a food processor; cover and process just until ground.

 

Add dates, cocoa, vanilla and salt; pulse until well blended and smooth.

 

Shape mixture into 1-inch balls using hands.

 

Cover and chill brownie balls for several hours before serving.

 

Makes 22. Store in an airtight container in refrigerator up to a week.

 

Note: Dates and vanilla are what sweeten these little mouthfuls.
