To me nothing says comfort food like a delicious and warm corn souffle. Here is the recipe that my family enjoys!
What you need:
2 Tbsp, melted butter
1 pkg (8oz) cream cheese, cubed and softened
1 can (15.25 oz) whole kernel corn, drained
1 can (14.75 oz) cream-style corn
1 pkg (8.5 oz) corn muffin mix
2 eggs
1 cup shredded cheddar cheese
How to make it:
1. Heat oven to 350* F
2. Mix butter, and cream cheese in a bowl until blended. Add the whole kernel corn, cream-style corn, corn muffin mix, 2 eggs, and mix well
3. Pour mixture into a 2 qt. casserole prayed with cooking spray. Top the mixture with shredded cheddar cheese.
4. Bake for 45 to 50 min or until a knife inserted in the center comes out clean.
