There are a lot of ways you can use your leftover steak that are yummy. You can enjoy it over mashed potatoes, add it to eggs for a heartier breakfast. But why not turn it into something AMAZING? Here are a few great ideas.
Steak Hash
Saute a small chopped onion and a small chopped red pepper in 1 tbsp of oil until tender. Add 1 minced garlic clove, and saute for another minute or two. Add 3 medium potatoes cooked and diced, along with 1cup of leftover steak. Continue cooking until meat and potatoes are heated through. Season with salt and pepper and secure with your favorite shredded cheese and poached eggs.
Thai Beef Salad
In a large bowl mix together 1/2 cup of fresh lime juice, 1/2 a lemongrass stalk chopped, 1/2 cup of freshly chopped cilantro, 1/2 cup freshly chopped mint, a chopped green onion, 2 tbsp fish sauce, 2 tsp sweet chili sauce, and1/4 cup of sugar. Slice leftover steak into thin strips and add to dressing mixture. Refrigerate for at least two hours and up to one day. About an hour before serving remove steak mixture from refrigerator and allow to come to room temp. Tear 1/2 head of lettuce into bite sized pieces and place in a serving bowl. Add steak mixture and top with diced cucumbers and cherry tomatoes.
Steak & Cheese Quesadillas
Slice leftover steak into strips and saute in 1 tbsp of oil with a small amount of tap seasoning (the amount depends on how much steak you have left over) until heated through. Place steak strips on one half of a large flour tortilla. Top with shredded cheese, sliced tomato, diced jalapeño, and a sprinkle of red onion. Fold over the empty side of the tortilla and grill in a hot pan with with 1 tsp of oil until golden brown. Flip and brown the other side. Remove from Pam and cut into 3 or 4 slices. Serve with guacamole, Sour cream, and salsa for dipping.
