Dulce de Leche with Roasted Peaches, Plums & Nectarines
Healthy Fruit Desserts Recipe 1
Dulce de Leche is a Latin American spread made by boiling sweetened condensed whole milk. Which is full of fat, here is a slimmed down version that is a healthier alternative! My family absolutely loves this fruit desert. I hope that yours will too.
Ingredients:
1/2 cup sugar and 2 tablespoons sugar
1/4 teaspoon cinnamon
2 of each halved and pitted, fresh Peaches, Plums, Nectarines,
1 teaspoon pure vanilla extract
1/2 cup nonfat sweetened condensed milk
1/4 cup Grand Marnier (or use fresh orange juice if the kiddies will be eating)
Directions:
1. Preheat the oven to 450 degrees.
2. In a small bowl whisk together the 1/2 cup of sugar and cinnamon.
3. In another bowl, toss the fruit, vanilla, and Grand Marnier (or orange juice). Add the sugar mixture and toss.
4. In a 9 X 11-inch roasting pan, place the fruit skin side down. Roast for 15 to 20 minutes, turning the fruit over half way through. The fruit will be ready when it’s fork tender.
5. Meanwhile in a small saucepan, combine the milk and the 2 tbsp of sugar and cook over medium heat until reduced by half, it will take about 10 minutes. This is the Dulce de Leche, the mixture will turn the color of peanut shells when it’s ready.
6. Arrange 1 half of each fruit, along with some of the pan juices, on each of 4 dessert plates. Drizzle 1 tablespoon of Dulce de Leche over the fruit on each plate.
7. The fruit can be served warm or at room temperature.
