Celebrate Can-It Forward Day with Ball Brand Fresh Preserving Products by Newell Brands & Some Recipes

I love canning so I do it all the time. One of the things I can the most is my Pickled Serrano Peppers. My husband absolutely loves them and has them with both lunch and dinner. So I have to have them on hand all the time. Being such a big fan of canning I am a big fan of Ball Brand Fresh Preserving Products by Newell Brands canning jars and products.

Did you know that Ball Brand Fresh Preserving Products by Newell Brands is celebrating the 7th annual Can-It Forward Day on August 5th. I am super excited about it! To kick things off, they’re hosting a month-long Preserving Summer Canning Series in August, encouraging canners across America to hang on to peak summer flavors year-round and enjoy fresh recipes.

These digital classes will be featured on the Ball Brand Fresh Preserving Products by Newell Brands Canning Facebook page each week, showcasing 4 popular canning categories – Salsa, Jams, Pickles and Condiments. They’ll be led by canning expert Jessica Piper and special guests Cookie + Kate, Garden Betty, Food in Jars and Whipperberry. Find the full press release below the recipes.

To give you a sneak peek, Ball Brand Fresh Preserving Products by Newell Brands has allowed me to share with you the Corn and Tomato Salsa and the Mixed Berry Jam recipes.

 

Corn & Cherry Tomato Salsa

Makes about 6 (16 oz.) pint jars

~Ingredients~

5 lbs. cherry tomatoes, roughly chopped
2 cups corn kernels (about 2 large ears fresh, but frozen thawed is fine)
1 cup red onion, finely chopped
2 teaspoons salt
½ cup fresh lime juice (about 3 large limes)
2 jalapeno peppers, seeded and minced
1 tsp. chipotle chili powder, optional
1/2 cup chopped fresh cilantro
6 Ball® (16 oz.) pint glass preserving jars with lids and bands

~Directions~

  1. Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  2. Bring all the ingredients to a boil in a large stainless-steel or enameled saucepan. Reduce heat and simmer 5-10 minutes, stirring occasionally.
  3. Ladle the hot salsa into a hot jar, leaving 1⁄2-inch headspace. Remove air bubbles. Wipe the jar rim. Center the lid on the jar. Apply the band and adjust to fingertip-tight. Place the jar in the boiling water canner. Repeat until all the jars are filled.
  4. Process the jars 15 minutes, adjusting for altitude. Turn off heat; remove the lid, and let the jars stand 5 minutes. Remove the jars and cool.

NOTE: The use of fresh lime juice in this recipe is for the purpose of fresh flavor and has been verified as safe by scientific testing.

Mixed Berry Jam

Makes about 4 (1⁄2-pint) jars

~Ingredients~

Mix and match your favorite berries such as strawberries, blueberries, blackberries, and/or raspberries to create this delightful jam.

2-2⁄3 cups crushed fresh berries (about 1-1⁄3 pounds)
3 tablespoons Ball® Classic Pectin
3-1⁄3 cups sugar

~Directions~

  1. Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands. 
  2. Combine the berries in an 8-quart stainless-steel or enameled Dutch oven. Gradually add the pectin. Bring the mixture to a full rolling boil that cannot be stirred down, over high, stirring constantly.
  3. Add the sugar, stirring to dissolve. Return the mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim the foam, if necessary. 
  4. Ladle the hot jam into a hot jar, leaving 1⁄4-inch headspace. Remove air bubbles. Wipe the jar rim. Center the lid on the jar. Apply the band and adjust to fingertip-tight. Place the jar in the boiling water canner. Repeat until all the jars are filled.
  5. Process the jars 10 minutes, adjusting for altitude. Turn off heat; remove the lid, and let the jars stand 5 minutes. Remove the jars and cool.

Change It Up

Instead of a mix of berries, you can choose to use just one. This recipe works well with just raspberries or blackberries.

Reduced Sugar Mixed Berry Jam

Add 2⁄3 cup unsweetened fruit juice or water to the berries and lemon juice, substituting 3 tablespoons Ball® Low or No-Sugar Needed Pectin for the Classic Pectin. Reduce the sugar to 1 cup. This jam will have a looser set than the full-sugar version, but just as much fresh fruit flavor.

To continue honoring this cherished tradition, Ball® Brand Fresh Preserving Products by Newell Brands is celebrating the 7th Annual Can-It Forward Day. On August 5, 2017, Ball® Brand Fresh Preserving Products by Newell Brands invites new and seasoned canners to come together to celebrate the act of canning and sharing the season’s bounty.

Throughout the month of August, Newell Brands, Makers of Ball® Brand Fresh Preserving Products, is encouraging canners across America to preserve peak summer flavors and enjoy their favorite fresh from the garden recipes all year long.
