HAWAIJE – The spice Hawaije is familiar to those coming from a Yemenite background, and is an essential ingredient in their culture and cuisine. There are two types of Hawaije, one used primarily for soups, the other for coffee.

Coffee with Hawaije mix is made up of ginger, cardamom, cloves and cinnamon, and sometimes anise seeds, and fennel.  One can use it to brew, steep or bake, and it smells as wonderful and delicious as it tastes. Although it is primarily used in brewing coffee, it is also used in tea, desserts, breakfast pancakes, cakes, and slow-cooked meat dishes. Add it to holiday eggnog, and it will indeed kick it up a notch!

Hawaije for coffee is prepared similar to Turkish coffee.

Ingredients:

½ teaspoon of Pereg Hawaije for Coffee spice

1 heaping teaspoon of finely ground coffee

Optional: sugar

 

Preparation:

Bring water and sugar to a boil in a pot or ibrik (small Turkish coffee pot)

Remove from heat and add coffee and Hawaije mix

Return pot to heat and allow the coffee to come to a boil, while stirring. Remove from heat when the coffee foams.

Pour into cup or glass.

 

Recipe Tip: Add Hawaije for coffee spice to your favorite baking recipes: Replace traditional spices with Hawaije for coffee to donuts, cookies and cakes, for a zippy and unique flavor!
