The sausages are hand stuffed into casings, hung to dry and perfectly cured – not cooked – for 8 to 12 weeks.“Our niche is all natural traditional salami. They didn’t use nitrates and preservatives in the early 1900s and we certainly do not need to add them now,”states Fortuna-Stannard.

The Fortuna Family – Patti, her husband Paul, and son, Chris – are third and fourth generation sausage makers, originally from Rhode Island, and now located in the Green Mountains of Vermont.
