Our Nellie’s Summer School Experience

Cooking with my boys is something that I absolutely love! They have been in the kitchen with me since they were very small. I remember they used to pull up a chair, a pot and a wooden spoon. They would set up a make believe stove on the chair and pretend to cook. When they were old enough I taught them to scramble eggs, flip pancakes, and so much more. Eggs however is a family favorite to both cook and eat. And we all have our favorite way of eating them.

Nellie’s Free Range Eggs are our favorite brand of eggs to buy. We love that Nellie’s is committed to providing better lives for hens, which means better eggs for you and your family! Coming from the first Certified Humane® farm in the country, Nellie’s girls (aka hens) are never caged and have as much, or as little, access to outside as they want. This is great because it makes Nellie’s eggs easy to prepare, inexpensive and nutrient dense.

Eggs are one of the most versatile and nutritious meal or snack options around. Plus, they’re a great first food to get kids into the kitchen and interested in cooking at an early age. That’s why when I heard about Nellie’s Summer School I knew we would be participating. Summer is so close we can taste it! And while “summer school” often gets a bad rap, Nellie’s Free Range Eggs wants parents and kids to get into the kitchen and prepare delicious egg-centric recipes during its own “Nellie’s Summer School” this June. We received a package from Nellie’s Free Range Eggs to make participating easy.

This is what we received, neat right!

Today I will be sharing with you two recipes from my boys. I’ll be sharing Aaron, and Diego’s favorite way to make and eat Nellie’s Free Range Eggs.

Aaron’s Favorite Breakfast

Ingredients

1 Nellie’s Free Range Egg

1 flour tortilla

1/4 cup shredded mozzarella cheese

Directions

Take 1 Nellie’s Free Range Egg and scramble.

Heat up a pan and pour egg in to cook.

Cook egg on each side until well done.

Take a flour tortilla spread shredded mozzarella cheese on it and place scrambled egg on top. Fold tortilla in half and enjoy.

Diego’s favorite breakfast

Ingredients

2 Nellie’s Free Range Eggs

Chopped tomato (as much or as little as you like)

Finely chopped onion (as much or as little as you like)

Finely chopped bell pepper (as much or as little as you like)

Extra virgin olive oil

Salt (as much or as little as you like)

Pepper (as much or as little as you like)

Directions

Heat pan and add a little extra virgin olive oil. Add onion and saute until soft, add tomato, bell pepper, salt, and pepper and saute for a bit more. In a bowl scramble eggs and add to the veggies in the pan. Keep scrambling the eggs and veggies in pan until eggs are fully cooked. Serve and enjoy!

Cooking Tip: For some added heat use finely chopped Serrano or Jalapeño peppers instead of bell peppers.
