Coconut Flour Porridge with Strawberries.

I just recently started cooking with coconut flour and I gotta tell you, it’s addicting. I’ll soon be sharing more and more recipes using coconut flour with you. But to start I wanted to share this coconut flour porridge recipe that is not only delicious, it’s super quick and easy!!! This is my Coconut Flour Porridge Recipe. I love it with strawberries, but ultimately you can use what ever fruit is your favorite. My oldest likes it with mangoes, my youngest likes his with bananas. The middle one doesn’t like it, but that’s because of it’s texture. I do want to share that if you’re not into the grainy textures, this will more likely not be your cup of tea. Other than that, it’s amazingly delicious! Here’s what you’re going to need.

Ingredients:

6 tbsp coconut flour 
1 1/2 cups of almond milk 
sweetener of choice, to taste
1/2 cup sliced strawberries.

Directions:

1) In a large bowl add coconut flour and almond milk (feel free to substitute with any milk you like) It may seem very thin at first, but keep stirring until the coconut flour absorbs the liquid and it thickens. Here’s a tip: if you like a thinner porridge then add more milk in increments of 2 tbsp at a time.

2) Once the porridge is at the consistency you like, add in the strawberries (or any fruit you like) and the sweetener. I use Truvia for me and for the boys I use honey. And mix until well incorporated. 

3) Enjoy!
