Asian Chicken Salad

This Asian Chicken Salad is the perfect salad for leftover rotisserie, boiled, broiled or baked chicken. It’s a very crunchy salad with a tasty sweet Asian-style dressing. The thing I like the best is that the kids love it too! 

 

Ingredients:

 

8 cups chopped romaine lettuce

 

2 cups shredded deli rotisserie chicken

 

1 English cucumber, halved lengthwise and

 

thinly sliced

 

2 carrots, peeled and grated

 

⅓ cup olive oil

 

2 tablespoons rice vinegar

 

2 tablespoons low-sodium soy sauce

 

1 tablespoon honey

 

1 tablespoon grated fresh ginger

 

1 clove garlic, minced

 

 

Directions:

 

1. Layer lettuce, chicken, cucumber and carrot evenly.

 

2.Whisk together oil, vinegar, soy sauce, honey, ginger and garlic.

 

3. Pour the dressing on the salad and combine.
